I lived on Genesee and Arnett and Smitty's was only a block away. What memories he was the best. He knew myself and my Mother. If he took care of us we got a nice size half a bird.(if his help did we got the scroniest bird) I worked at the Carvel's at Bullshead my senior year at Madison High so I could bye my own chicken dinners. It was a real treat for me. After I was discharged from the Air Force in 79 that was one of the 1st places I wanted to go to.

To Smitty's grandson he was a true gentleman. I was and still am glad to have known him

I was born In Rochester New York and I moved to sunny Southern California in 1976. I have returned to Rochester a few times over the years and every time I would go there I would ask if i could buy the sauce in the stores. To my surprise I was able to do so. I have also asked my sister to go buy the "Snuffy's" sauce and mail it to me. Which she has done and I felt like I was getting the best gift of all time in the mail. I had smiles, from ear to ear and bragged about it to my friends and culinary arts friends who heard about it on the cooking channel. Of course that option is very expensive. I also attempted to contact Lanovara, a company which only mails it local to Rochester, what a disappointment that was, and still is. I fully understand what it means to try to locate the best sauce ever made. I grew up going to Snuffy's. It would be great if I could get this sauce in Southern California, Los Angeles to be specific. Good luck to everyone as you proceed on your journey to locate the best sauce. I can relate to each of you.

I remember going to Smitty's and getting the half chicken on wonder bread with macaroni salad and the whole thing swimming in the most delicious finger-licking sauce ever with lots of red pepper flakes. I didn't usually like "hot" food but this was hot and sweet. You could eat the whole thing bones and all. I only went a couple of times because I was just visiting but I've never forgotten that great chicken and sauce. Glad to know now what it's called and how to make something like or buy something like it. Thanks!
Don't know how true this is but I heard this out of Mr. Smittys own mouth;
I was about 11 or 12 so it had to have been around 1983... But he came over to my mom and my table and sat down for a conversation ( as he always did) and somehow the conversation got on the subject of the sauce and this is what he said "My wife sold the recipe"
That is a conversation that I will never forget.
I love you ROC.
Great thread. Which mustard should I use?

Can't get enough and I live in Europe so I have to make it.

I love Country Sweet. Have lived in GA 26 years always have some on hand.
Actually going to try Boss Sauce today at a restaurant in Phenix CIty AL.
Hello, I was searching for a country sweet recipe myself and ran across your post. So when I located the one I wanted, I came back here to post the recipe for you since it didn't look as if anyone had done so yet. Enjoy!

Country Sweet:

1 cup sugar
2/3 cup prepared mustard
3/4 cup catsup
1/4 to 1/3 cup lemon juice
1/4 to 1/2 cup vinegar
1/4 teaspoon dry mustard (optional)
1/2 to 2 teaspoons hot pepper flakes (crushed red peppers)

Combine all in a small saucepan and simmer until thickened. Vary the amounts of lemon juice and vinegar to adust the sweetness to your liking.
A boss sauce is pretty much just Franks Red Hot and Butter.... Hope that helps smiling smiley
I am planning on making this sauce, do I have to use the pineapples? Does it taste as good as country sweet or boss sauce. Will try soon, will let you know how it come out. Thanks for your recipe. I would like to have Nicks sauce too.

I lived in Rochester for more than 30 years and then moved away. I never remember Snuffys but I do think that Smitty around Genesee street was the first. This was back in the seventies and early eighties. It was in a bad neighborhood and it did not matter. You saw everybody, making the line down the street, even at midnight. They dunked a half a chicken right out of the fryer into the sauce and slapped it over two pieces of white bread with macaroni salad on the side. They also served ribs and fried gizzards that way. If you search on the Internet you can find Smittys story. This is the one I remember as being the first with any kind of sauce like this. And before Country Sweet, Sals Birdland was around. They still have one location and are awesome.
